Just based on the smell and the creepy crawlies on and in jacks, I'd rather try to eat a coyote. I know I've seen lots of jacks with ugly livers, which is supposed to indicate tularemia, which you can get just handling them - note how gingerly I'm touching those things. Sanitized my hands immediately afterward. As a general rule, I usually don't touch them at all.

Botfly larvae crawling out of their faces is real horror movie special effects stuff too.

Like I said, just the thought of eating one kind of makes my skin crawl.

Might add, I HAVE eaten rock chucks. Kind of greasy, but "okay".

Dave, after hearing your description of what you have seen with jackrabbits, I don't believe I'd try them. I've never seen anything like that with cottontails. They are quite tasty. I have eaten several groundhogs and the ones my mother fixed were really good. I assume there isn't much difference between groundhogs and rockchucks.

I've seen at least one cottontail with white spots on it's liver. As far as Jacks go, I won't eat them, but I had a friend that would eat all he could get.

You couldn’t pay me to eat a jackrabbit with the different diseases and problems they have. My daughter thinks cottontails are one of the greatest foods known to man. Never really hunted them until we found she likes them so much. She is kind of disappointed they are not in season all year in Utah.
